cHow to go from a beginner to an expert in everything O365

Hi all,
I recently graduated college and got an entry level IT job with a company of around 400 E3 users. For the last 3 months I was doing mostly support, but also had a hand in multiple projects including migrating mailboxes from onprem to O365. Now my role is about to change.
Basically, my boss now wants me to become the go-to person for all things O365. He knows very well that I am a complete beginner. He wants to “shape” me into an O365 expert, which I am extremely excited about and think is an amazing opportunity.
So my question is, what can I do to speed up the process? Any recommended reading material, videos, or podcasts? Any tips in general? Kind of a side question, but how can I keep up to date with all the updates?
