Ok so just what is the difference between Office 365 and Office 2019

So we are in the process of moving to Office 365, at least for exchange, because our Exchange server is getting too difficult to maintain.
What is the difference between the 365 Client apps like Word and Outlook and the 2019 client apps like Word and Outlook?
Is it just a license thing that one is cheaper?
It seems mighty confusing to me to "be on" Office 365, if we are going to be using the 2019 clients.
